Bitter substances were almost completely bred out of our current diet. Everything should taste uniform and sweet. In the past, bitter substances were even an important companion during recovery and can be found in every well- stocked medicine cabinet. In the plant kingdom, bitter substances serve as protection against feeding and are contained in many roots. But also in leaves and fruits.
“Something bitter in the mouth is healthy for the stomach - that's an old saying. We lack bitter substances in our diet today. "
